With Sylvana, we opted for a Christmas brioche, which will make everyone's mouth water.
Here's the recipe! You will need:
For the brioche dough
Flour 600g
Sugar 100g
Salt 10g
Fresh baker's yeast 20g
Eggz 4 + 1 for the glaze
Full cream milk 150g
Butter 250g
For the four-spice butter
Butter 50g
Sugar 75g
Cornflour 10g
4 spices 10g
For the decoration
Sugar sprinkles 50g

Knead the fresh baker's yeast, flour, sugar, salt, egg and whole milk for 15 mins at medium speed.

Add the chopped cold butter.

Knead for 10 to 15 minutes at medium speed, until the dough comes away from the sides of the bowl of your mixer.

Leave the dough to rest at room temperature for 30 mins.

Knock the dough back and reform a ball before leaving it to rest in the fridge in a bowl covered with cling film, for at least 2 hours, ideally until the next day. Make your own 4-spice butter by mixing all the ingredients together. Be careful, the butter must be creamy.

Shape your brioche dough as you please: roll out the pastry, spread it with your 4-spice butter mixture, roll it up before cutting it to braid it and form a crown.

Leave the brioche to rise on baking paper or in a buttered mould, on a baking sheet in your oven at 35-40 °C for 1 hour.

Glaze the brioche with a whole egg.

Bake the brioche at 180 °C for 45 mins.

Decorate with sugar sprinkles.
